Tasty Lemon & Garlic Salmon

Get more salmon into your diet with this tangy and aromatic recipe. Choose a smaller portion and your friends would love this as a refreshing starter at any dinner party. This is a very quick and easy recipe, for those of us who are time-poor!

Ingredients

1 portion of salmon (about 4 ounces) remove the bones before you start, or buy from your fishmonger counter, and ask them to de-bone it for you. It is often cheaper to buy a whole salmon, have it filleted, and then you have plenty for the freezer too!
2 garlic cloves, crushed. Garlic is so good for you, so don’t hold back you can add as much as you like.
¼ teaspoon virgin olive oil. Olive oil is excellent and it is what all healthy Mediterraneans are weened on!
½ tablespoon dill, finely chopped. Dill can also be grown quite easily in your garden or window box, so give it a try.
1 tablespoon fresh lemon juice. Lemon juice brings out the flavor of the fish and cuts through oil.
Salt & ground black pepper to taste. Try sea salt or Himalayan salt.

Directions

Rub the salmon gently in salt and pepper. Then sear the salmon skin side up in a heated frying pan with oil for around 3 minutes. Do the same thing to the other side, gently turning it over trying not to break the fish. Then move to the side of the pan.

In the empty part of your pan, saute the garlic cloves for one minute. Last-minute add the lemon juice. Spoon the resulting mixture over the salmon until soft and tender.
Top with fresh dill before serving. you can have just fish on its own, or enjoy it with some fresh parsley salad. Chop up some fresh parsley, and add some chopped tomatoes and cucumber, this is a lovely leafy salad to add to fish or meat.
