Recipe: Feta, Chickpea & Pomegranate Salad

Chickpeas and other legumes contain phytoestrogens that mimic estrogen activity, thus helping you restore balance to your estrogen levels. It also has antimicrobial, antioxidant, and anti-inflammatory properties. Check out this Feta & Chickpea & Pomegranate salad recipe that you can make during the hot summer months.

Feta, Chickpea & Pomegranate Salad Ingredients

2 cups soaked and cooked chickpeas (Soak if dry, overnight – but cooked ones are available in jars)

1 small red onion, peeled and finely sliced (If you love onion use a larger one, you could replace this with spring or salad onion if you wish)

1-2 red chilies, deseeded and finely sliced (leave the seeds in if you can stand the heat)

2 small tomatoes, chopped (fresh is always best, try to go organic where ever possible)

½ cup fresh mint, chopped (grow some in your garden, it is so easy, but we recommend a pot, as it likes to spread…everywhere!)

½ cup fresh green basil finely ripped (grow your own on a window ledge, nothing nicer than fresh herbs, you could use parsley if you don’t have basil)

½ cup feta cheese (go for organic where you can)

1 lemon, cut in half, and juiced separately (organic lemon best)

3 tablespoons extra virgin coconut oil (extra virgin olive oil would also be good)

sea salt to taste

freshly ground black pepper, taste

Feta, Chickpea & Pomegranate Salad Directions

  1. Mix the onion, chilies, and tomatoes in a bowl.
  2. Dress it with the juice of half a lemon and extra virgin coconut oil. Season with salt and pepper to taste.
  3. Heat the chickpeas in a pan and add 90% of them to the bowl.
  4. To get a nice, creamy consistency, mush up the remaining chickpeas before adding them to the mix as well. Marinate it for a little while.
  5. Before serving, give the chickpea salad a final dress with fresh mint and basil.
  6. Season once again and add the remaining half lemon juice as you deem fit.
  7. Place the salad on a serving dish and sprinkle feta cheese on top as well as those jewels that are pomegranate seeds for wonderful color as well as goodness.
